Spinach & Roasted Asparagus Salad

Look how appetizing Mandy’s salad looked.

Here’s what mine looked like.


My prosciutto isn’t looking very good, and I probably should have broken the yolk for a prettier picture.  You can learn a lot from trying to copy people.

I highly recommend giving Mandy’s recipe a try.  You don’t need to be very exact.  This really felt like a summer lunch.  I didn’t have a glass of wine, but maybe next time.

  1. Yayy, I’m so glad you liked it! It really is the perfect spring/summer lunch, isn’t it? I’m SO sad that the farmer’s market is officially out of asparagus now–the season is just too short!
